Although it’s a little hot so you may not want a hot dish, there are those time when you want some good ol’ comfort food and Chili Mac is definitely one of those meals that will make you feel warm, peaceful, and filled!
8 oz. of pasta spirals or macaroni
1 chopped onion
2-3 cloves of minced garlic
1 small bell pepper, diced
3/4 cup textured vegetable protein
1 15 oz. can crushed tomatoes
1 15 oz. can kidney beans, include the liquid
1 15 oz. can corn, include the liquid
1 tablespoon chili powder
1 teaspoon cumin
Cook the pasta in boiling water until it is tender
Drain and rinse it under hot water, then set it aside
Heat 1/2 cup of water in a large port, then add the chopped onion and garlic.
Cook until the onion is soft, which is about 3 minutes.
Add the rest of your ingredients and the spices and an additional 1/2 cup of water.
Stir to mix, then simmer over medium heat, stirring occassionaly for about 20 minutes.
Put the cooked pasta into a bowl and place your chili mixture over the pasta or combine the pasta and chili mixture
