Simple Lentil Soup

Soup is easy, tasty, and delicious. So although it’s a hot summer, you may want some good soup-especially if you happen to have a cold right now!

1 tsp vegetable oil
1 diced onion
1 sliced carrot
1 cup dry lentils
4 cups of vegetable broth (see our easy broth recipe)
1/4 tsp pepper
1/4 tsp dried thyme
2 bay leaves
dash salt
1 tbsp lemon juice
Sautee the onions and the carrots in a large pot until the onions look clear
Add the lentils, broth, pepper, thyme, leaves, and the salt
Reduce the heat and allow it to simmer
Cover and cook the meal until the lentils are soft which is about 45 minutes
Remove the bay leaves and stir in the lemon juice
